I did know that the oil when warmed is much thinner, but I have always been under the impression that tolerances when warmed up were much closer, meaning thinner oil is better. Thick oil would be more necessary when cold, because as the metal heats, it expands, leaving less room for the oil to pass.
I think I understand much better with the graph. I definitely now understand your counterpoint now though (with regards to 10w vs 0w). Our discussion has left my level of understanding of engines and oil at this point, so I don't have much else to add here. Thanks for clarifying though, I understand what you meant completely now.
