I can NOT imagine carrying any kind of lumber on a PCX. I go to the grocery stores on my PCX, or to a department store, or even a hardware store, but not for lumber. Way too bulky. I saw someone put a 2x4 on his bike and he didn't make it out of the parking lot.
As for a large pizza, I've never thought about carrying one. That would be a trick. I have an idea, but I haven't tried it. Here is my idea. Like I said, I have not tried it. If you have a tailbox, take it off for the trip for pizza. Put a piece of square plywood on top of the tailbox rack, with small legs on the wood to make it a flat surface. Run a bolt through the center of the plywood and rack with a very large washer and a wing nut on the bottom that will hold the plywood tight. You should be able to bungee cord the pizza to the plywood, or use a ROK strap or two.
Someone needs to try this sometime and let me know if it works. As far as putting all of this on top of the tailbox instead of just the rack, that is something I haven't thought about.
If you are going to use your PCX as a going-to-the-store vehicle, I am amazed at all of the interesting ways the bike has been used to carry stuff. I think the Asians get away with a lot of things we wouldn't even think about doing.
