Has anyone put in a CNC X250RR 8.6 CAMSHAFT & LARGE DIAMETER ROLLER ROCKER kit in there Honda pcx150
STOCK motor

ME (also the yumi TB and bigger injector)... slightly better than stock, but worth it

maybe.
probably works better with a BBK... but Forza swap

Stock motor has too low static compression ratio for such a big cam like Yuminashi's.
I put one in a Vario 150 stock (which has the same engine as the new gen PCX150 LED).
Results are not too good. Went back to stock. Yuminashi cam will benefit a bigger engine + much higher compression ratio.

My personal opinion is you should not try a racing cam in a stock motor with low compression (10.6).
The valves will never touch the piston, but performance wise I don't know.
Should be a good project to try.

So, when replacing the cam, what else is being changed in the system along with it? Larger intake and exhaust as well as spark/fuel maps(calibration)?

Depends on how deep your pocket is and subsequently your overall setup.
Larger intake and exhaust should only be done when fitting a bigger piston.
Re-tuning the fuel map with a good fuel controller piggyback will be absolutely necessary.
