I'm not too familiar with the Orlando area, or I'd recommend a few places to go. At Disney, make sure to ride Space Mountain. It's legendary. The rest is fun, but more targeted towards a young audience. You'll still have a blast though, the park is amazing, and the efforts they go through to make it seem like a "magic kingdom" instead of a theme park really show.
I almost always go to Destin, FL -- the Gulf of Mexico has much, much nicer beaches than the Atlantic. That said though, the closest Gulf beach is in Tampa. Tampa's cool, but avoid Saint Petersberg, it's ghettaculous and "they'll rape your white ass." Such was how I was warned, I ignored it, and almost got carjacked. The areas more to the North are safer though, Clearwater is nice.
If you go to an Atlantic beach, West Palm Beach is roughly 3 hours away, but is absolutely gorgeous and a really fancy rich area to go. Last time I went there, the beach was so covered with seashells you couldn't even see the sand. It was beautiful... Here's a pic:
